You can choose among proven recipes of "Pod čripnjo" dishes, or you can give us your own idea of what kind of meat with what side dish you would like to taste the istrian way. BEVERAGES

The surprises in the Istrian Cellar continue as well when it comes to chosing what to drink. The wines being served in the Istrian Cellar are exclusively autochthonous wines. We are serving open and bottled wines from the viniferous surrounding area of Koper. The most appreciated open wines are the "malvazija" and the "refošk", from the bottled wines – which are not a few – is the "sivi pinot". You can expect pleasant surprises with the liquors too. You will be served with in grape peel distillate dipped white mistletoe, with grapes, cherries, marascas or different kinds of istrian herbs, with ruda (autochtonous herb), orphine or šparg (asparagus tips).

SLOW FOOD

An increasingly popular way of serving the dishes is the so called "slow food". At this type of food serving you don't have to worry whether you will choose the right dish for yourself, for you will be able to taste many different dishes. That is why we mostly recommend "slow food":
- welcome (appetiser)
- something to fork on the table (malvazija)
- hotpot (mineštra) / (bobiči) (shardonny)
- raviolis with truffles (barik-white)
- home made pastry with istrian goulash (refošk)
- ombolo the istrian way (cab. sovignon)
- sausage in refošk wine (barik-red)
- dessert (sweet wine)
